Dark Chocolate Coconut Bites

Dark Chocolate Coconut Bites

This recipe comes from Lisa Johnson of the True Food Movement.


  • 1 coconut (fairly small, or do what I did and buy one already broken up into chunks)
  • 5 ounces of PASCHA chocolate chips (pick your preferred level of cacao)
  • 2 tablespoons of maple syrup
  • A sprinkle of sea salt


  1. Peel the coconut and chop it into small bits, a little bigger than an M&M.
  2. Take a medium size pan and add about 2 inches of water, place on the stove on medium heat. Take a heat-proof bowl and place it over the water, make sure the bowl doesn’t touch the water.
  3. Place the chocolate chips into the bowl, it should start melting quickly.
  4. Add the maple syrup and stir constantly to prevent burning. In three to five minutes the chocolate will be melted.
  5. Add the coconut bits and remove from heat. Thoroughly coat the coconut pieces.
  6. Pick out the bits and place them on parchment paper to cool.
  7. Add a sprinkling of sea salt for extra flavor.


You can adjust the maple syrup up or down depending on the type of chips you’re using, and your preference for sweetness. There was no maple flavor in our chips, but we used a mild-flavored syrup. Next time we’ll use a heavier, more flavorful syrup.

This recipe is vegan because of the chips we used.
