How do you fill a delicious DAIRY FREE cupcake with our Make Me Smile! VEGAN Chocolate Fruit Spread? Our Wednesday recipe shows you how. And then watch it melt into the center of a cupcake.

INGREDIENTS:

Cupcake Filling:

  • 1/3 cup PASCHA Make Me Smile! Spread
  • 1 tbsp rice milk

Chocolate Icing:

  • 2 cups cooked sweet potato (about 1 medium potato)
  • 1/2 cup canned full-fat coconut milk
  • 1 cup PASCHA 85% Cacao Chocolate Chips, melted

DIRECTIONS:

  1. Line a muffin tin with paper lines. In each tin place 1 spoon of cupcake batter to just cover the bottom.
  2. Roll a strip of parchment paper to form a tube. Place this tube down the centre of the cupcake and surround it with batter, filling as normal. Repeat for all cupcakes. Bake as normal.
  3. Remove cupcakes from the oven and let cool. Once cool, remove the parchment paper strips.
  4. In a small mixing bowl, combine the PASCHA Make Me Smile! Spread with the rice milk to thin the mixture. In the holes created by the parchment paper, pour a small amount of the chocolate filling. Set aside.
  5. In a blender, add the cooked sweet potato, coconut milk, and melted PASCHA 85% Cacao Chocolate. Blend until smooth. Ice each cupcake as desired.
