In a small saucepan, heat canned coconut milk until starting to bubble.
Place 1 cup PASCHA Chocolate Chips into a heatproof bowl. Once coconut milk is heated, pour over PASCHA Chocolate Chips. Allow to sit for about 30 seconds and then whisk until smooth.
Let sit a few hours, or overnight to set.
Roll mixture into balls and set aside.
Melt 1 cup PASCHA Chocolate Chips. Dip each truffle into the melted chocolate, tapping to remove excess chocolate. Set each aside to harden. If decorating with sprinkles, then add before fully set. If you are finding the chocolate a bit too thick to dip then add 1 tbsp olive oil and whisk until smooth.
