Chocolate Ginger Roasted Pears

Ingredients:

Glaze:

  • 3 tbsp Earth Balance
  • 1 lemon, zested
  • ¼ tsp salt
  • 2 tsp cinnamon powder
  • 2 tbsp honey 

Chocolate Ganache:

  • ½ cup canned coconut milk
  • 2 tbsp minced ginger
  • ½  tsp salt
  • 2 tsp cinnamon powder
  • 1 ⅓ cup PASCHA Chocolate Chips (we used 85% Cacao)
  • 4 just ripe pears

Directions:

  • Preheat oven to 400°F.
  • Core each pear and place in a heatproof dish. If pears won’t stand up on their own, then slice the bottoms off to make level. Place in oven and roast for 30 minutes.
  • In a small pot over medium low heat, glaze ingredients until Earth Balance is melted and mixture is heated through.
  • Take pears out of the oven and glaze each. If desired, set some aside to add after plating.
  • Place pears back in the oven and roast for another 15 minutes. Reglaze the pears with the glaze that remains in the dish. If desired continue roasting until desired consistency is reached.
  • While pears are roasting, heat coconut milk, minced ginger, salt, and cinnamon powder in a small pot. Place PASCHA Chocolate Chips into a heatproof bowl. Once coconut milk mixture has started to simmer, pour over chocolate chips. Allow to sit for about 30 seconds. Whisk until fully melted.
  • Plate each pear with a spoonful of ganache, and some extra glaze. Sprinkle with hemp seeds and lemon zest. ENJOY!
