A Step-by-Step Guide to Chocolate & Wine Pairing
A chocolate and wine pairing is one of the simplest ways to create an elevated experience at home. It feels intentional, interactive, and just structured enough to guide guests without feeling overly formal.
With Pascha Chocolate, the experience becomes more refined. Each bar is made with just 1 to 3 ingredients, allowing the true flavor of cacao to come through clearly. That clarity makes every pairing more precise & more enjoyable.
This guide walks you through how to host your own Pascha Chocolate wine pairing, from planning your guest list to selecting wines, setting up your presentation & guiding guests through each tasting step.
Choose Your Guest List
This is where your experience begins.
Aim for a group of 6 to 12 guests. This size keeps the tasting interactive while allowing for real conversation, shared reactions & a sense of energy throughout the room.
Invite a mix of people. Beginners, seasoned wine drinkers, chocolate lovers, or those who are simply curious. It doesn’t matter where anyone falls. No experience is needed.
This is about creating an experience around Pascha Chocolate that feels thoughtful, elevated & fun.
Send a simple invitation, set the tone that this is a chocolate & wine pairing, & let the experience speak for itself.
Choose Your Wines
Select wines that offer a range of flavors, so each Pascha Chocolate has something distinct to pair with.
A Well-balanced Lineup Includes:
- Cabernet Sauvignon for depth & structure
- Merlot for smooth, rounded notes
- Pinot Noir for lighter, fruit-forward contrast
- Zinfandel for bold fruit & subtle spice
- Port or Rosé to pair with 55% cacao for a softer, more indulgent finish
Focus on variety, not perfection.
Choose Your Pascha Chocolate
This is what defines the experience.
Not all chocolate pairs well with wine. Many include additives or excess sugar that mask the true flavor of cacao. Pascha Chocolate is different & our Pascha Promise shares our commitment.
Each bar is made with just 1 to 3 ingredients, allowing the cacao to come through clearly. That clarity is what makes each pairing more noticeable, more interesting & more enjoyable.
Pascha Chocolate is also:
- Certified organic
- Vegan
- Top allergen-free
- Made with Rainforest Alliance Certified cacao
- Family-owned & operated
For your tasting, use a full range of cacao percentages:
- 100% cacao for bold intensity
- 85% cacao for rich depth
- 70% cacao for a balanced profile
- 70% with Coffee for roasted notes
- 55% cacao for a smoother finish
This progression lets guests experience how cacao evolves across percentages & how each one interacts differently with wine.
How to Experience the Pairing
This is where it all comes together.
- Start with a piece of Pascha Chocolate. Let it melt slowly so the flavor fully develops.
- Then take a sip of wine.
- Go back to the chocolate again.
- That second bite is where the pairing really shows up. Flavors shift, soften & open in a way you don’t get from tasting them separately.
Move through each pairing in order, from 100% cacao to 55%. This allows your palate to build naturally from bold to smooth.
There’s no right or wrong here. Some pairings will stand out more than others. That’s part of the experience.
Notice what you like. Talk about it. Compare reactions. That’s what makes this fun.

Categories:

- Texture
- Overall pairing
Print out the Pascha Chocolate tasting notes PDF & give one to each guest to record their notes. You can all compare after each or at the end. Whatever the group or host decides. Either create a suitable paring party flow.
Both options keep everyone involved & makes the tasting feel more intentional.
Guide the Tasting Flow
Walk guests through a consistent rhythm.
Steps:
- Smell the wine. Swirl it in the glass & really try to identify the notes.
- Taste the designated Pascha Chocolate % & slowly let it melt in your mouth. Do not chew or bite the chocolate.
- Sip the wine slowly to engage your tastebuds for the pairing.
- Taste the chocolate again using the same method as above.
We recommend that you move in order from 100% to 55%. This progression allows the palate to adjust naturally.
Allow time between pairings for conversation & reflection. This is a magical experience to share with each other & learn.
How Long It Should Take
Plan for 45 to 60 minutes for the actual pairing.
This gives enough time to move through each pairing, take notes & revisit favorites. If guests want to continue, let it happen naturally.
If all the guests are not acquainted name tags are a good idea or a brief introduction prior to the tasting. This can help inspire everyone to feel comfortable sharing during the actual pairing.
