Ingredients (Makes 8–10 Bars)

For the Mango Jam:

  • 1 cup mango (about 1 large mango)
  • 1 tbsp chia seeds

For the Filling:

  • 1 ¾ cups full-fat coconut milk (1 x 14 fl oz can)
  • 1 tsp vanilla extract
  • ⅓ cup maple syrup
  • ½ cup seed or nut butter
  • 1 scoop protein powder
  • 3 tbsp cocoa powder
  • Pinch of salt

For the Chocolate Coating:

  • 1 cup Pascha 85% Dark Chocolate Chips
  • 1 tbsp coconut oil
  • Freeze-dried mango (optional, for garnish)

Instructions

Step 1 – Make the Mango Jam

Peel and chop your mango, then puree until smooth. Transfer to a small bowl and stir in chia seeds. Chill in the fridge while you prepare the filling. The chia seeds will naturally thicken the jam.

Step 2 – Blend the Filling

In a blender, combine coconut milk, vanilla, maple syrup, seed or nut butter, protein powder, cocoa powder, and salt. Blend until smooth and creamy.

Step 3 – Assemble the Fudgsicles

Spoon a layer of mango jam into the bottom of each fudgsicle mold. Spread evenly. Fill the rest of the mold with the chocolate mixture. Insert popsicle sticks and freeze for at least 3–4 hours, or until fully solid.

Step 4 – Make the Chocolate Coating

Melt Pascha Dark Chocolate Chips and coconut oil in a double boiler, stirring until smooth. Pour into a tall, narrow glass for easy dipping.

Step 5 – Dip & Decorate

Carefully remove fudgsicles from molds. Dip each one into the melted chocolate, then place on a baking sheet lined with parchment. If desired, drizzle with extra chocolate and sprinkle with freeze-dried mango for a pop of color and crunch.

Step 6 – Final Freeze

Return dipped fudgsicles to the freezer for at least 1 hour before enjoying.

Tips for Perfect Fudgsicles

  • Protein powder: Any plant-based or whey protein works, but chocolate or vanilla flavors are best.
  • Nut butter choice: Almond, peanut, cashew, or sunflower seed butter all work beautifully.
  • Chocolate coating: Use high-quality dark chocolate like Pascha for the best snap and flavor.
  • Storage: Wrap individually in parchment paper and store in a freezer-safe container.
