👩🍳 How to Make Valentine Rice Crispy Pops

Step 1: Prepare the Rice Crispy Base

Follow the directions to make Pascha’s White Chocolate Chip Rice Crispy Squares. Leave the mixture in the pot and set aside while you prepare the chocolate coating.

Step 2: Melt the White Chocolate

Using a double boiler, melt the Pascha Vegan White Bars. Separate the melted chocolate into two bowls and add pink food coloring to one bowl, mixing until smooth and evenly tinted.

Step 3: Fill the Popsicle Molds

Add about 1 tablespoon of melted chocolate to each popsicle mold — half white, half pink. Tap the molds on the counter or use a spatula to spread the chocolate evenly along the bottom and sides.

Step 4: Add the Rice Crispy Mixture

Take a portion of the rice crispy mixture and shape it to fit the mold. Gently press it in without flattening completely — this helps the melted chocolate climb up the sides slightly while keeping a thick chocolate base.

Step 5: Make the Chocolate Hearts

Use the remaining melted chocolate to fill mini heart molds. Let them set fully before removing.

Step 6: Decorate the Pops

Once the pops and hearts have set, remove them from their molds. Drizzle with more melted chocolate (melt more if needed) and add festive Valentine sprinkles. Use a dab of melted chocolate to stick the hearts onto the pops.

Step 7: Serve or Gift!

Let everything set completely, then enjoy your Valentine Rice Crispy Pops — or wrap them in food-safe packaging, tie with a ribbon, and gift them to someone special! 💕

Instructions:

  1. Follow the directions to make the rice crispy squares. Leave the mixture in the pot and set aside.
  2. Use a double boiler to melt the Pascha Vegan White Bars. Separate the melted chocolate into two bowls and color one with pink food coloring.
  3. Place about 1 tbsp of melted chocolate into each cavity of the popsicle molds. We did half with white and half with pink chocolate. Tap molds on the counter or use a spatula to spread the chocolate all along the bottom of the mold.
  4. Take a portion of the rice crispy mixture that is enough to fill the mold and shape to fit. Press into the mold gently being careful to not force it all the way down. The goal is to push some of the melted chocolate part way up the sides but leave a layer coating the bottom. Don’t worry if you have a bit much or a bit too little to fill the mold. The ‘bottom’ will become the ‘top’. Set aside to let the chocolate set.
  5. Use more of the melted chocolate to fill the mini heart molds. Let the chocolate set before using.
  6. Once all the chocolate has set, remove the hearts and the popsicles from the molds. Drizzle with melted chocolate, melting more if needed, and sprinkle with valentine sprinkles. Use some melted chocolate to adhere the hearts to the pops. Let set.
  7. Enjoy! Or place in food-safe packaging, tie with a ribbon and gift to that special someone.
