  • Millet flour
  • Psyllium husk
  • Cocoa powder
  • Coconut sugar
  • Instant yeast
  • Baking powder
  • Baking soda
  • Salt

Create a well in the center.

Add:

  • Warm vegan milk
  • Melted vegan butter
  • Dairy-free yogurt
  • Apple cider vinegar

Using the dough hook, knead for 10 minutes, scraping down the bowl as needed.

Step 2: Make the Filling

Cream together:

  • Vegan butter
  • Coconut sugar
  • Cinnamon

  2. Create a well in the center and add in the milk, butter, yogurt and apple cider vinegar.
  3. Using the dough hook on the stand mixer, knead for ten minutes, making sure to scrape the sides.
  4. While it’s mixing, cream together the ingredients for the filling. Set aside.
  5. Sprinkle your countertop with more tapioca starch so the dough doesn’t stick and roll out into a large rectangle ¼ inch thick. Spread filling over the dough leaving a small border around the edges. Roll the dough starting from the long end into a log. Using a bench scraper or sharp knife, cut the dough into 9 rolls. Arrange cut ends down in a square pan lined with parchment paper. Cover and let rise for 1½ hours or until doubled.
  6. Preheat oven to 350°F. Bake for 35-40 minutes.
