Ingredients

Cookie Base:

  • 1 cup rolled oats
  • ¼ cup ground flax seed
  • 5 scoops collagen (use a vegan alternative for 100% plant-based)
  • ½ cup coconut oil, melted
  • ½ cup maple syrup
  • ½ tsp salt

Date Caramel:

  • 1 cup dates
  • ¼ cup natural peanut butter
  • Water, as needed
  • ¼ tsp salt

Peanut Layer:

  • ¼ cup chopped roasted peanuts

Chocolate Layer:

  • 1 cup Pascha 55% Cacao Dark Chocolate Chips

Directions

Step 1: Prep the Dates

Place dates in a bowl and cover with boiling water. Let soak for 1 hour to soften. While they soak, prepare the cookie base.

Step 2: Make the Cookie Base

In a mixing bowl, combine oat flour, rolled oats, flax seed, collagen, coconut oil, maple syrup, and salt. Stir until well combined. Spoon mixture into silicone muffin trays, pressing down to form a base. Chill in the fridge until set.

Step 3: Blend the Caramel

Drain the soaked dates. Add them to a blender or food processor along with peanut butter and salt. Blend until smooth, adding water one tablespoon at a time until you reach a spreadable caramel consistency.

Step 4: Assemble the Layers

Spread a layer of date caramel on top of the chilled cookie base.

Sprinkle chopped roasted peanuts over the caramel.
