Step-by-Step Instructions

Step 1: Make the Ice Cream Base

In a saucepan over medium heat, whisk together oat milk, coconut cream, maple syrup, salt, and 2 cups of vegan butter popcorn.

Bring to a gentle boil, then reduce heat and simmer for 5 minutes.

Strain out the popcorn.

Transfer the strained popcorn to a blender along with the remaining popcorn and xanthan gum.

Blend until smooth.

Strain once more to remove any popcorn bits.

Pour into a Ninja Creami container and freeze upright overnight.

No Ninja Creami?

Freeze the mixture in ice cube trays overnight and blend before serving.

Step 2: Make the Salted Caramel Marshmallow Popcorn

Melt coconut oil in a saucepan.

Add marshmallows and stir until melted.

Mix in Pascha Salted Caramel Chips until smooth.

Fold in popcorn until evenly coated.

Spread onto a parchment-lined baking tray.

Bake at 225°F for 6–8 minutes, watching carefully.

Cool completely before breaking into bite-sized clusters.

Reserve some for garnish.

Step 3: Assemble

Melt ¼ cup Pascha Salted Caramel Chips in a double boiler.

Allow the frozen ice cream to soften slightly.

Process in a Ninja Creami using the Respin setting if needed.

If blending from frozen cubes, add a splash of dairy-free milk if necessary.

Ingredients:

Ice Cream

  • 1¼ oat milk 
  • 1 cup coconut cream 
  • 1/2 tap xanthan gum
  • 2 tbsp maple syrup
  • 4 cups vegan butter popcorn, divided
  • ½ tsp salt

Salted Caramel Marshmallow Layer

  • 1 tbsp coconut oil
  • 2.5 oz Dandies Marshmallows (equivalent to about 7 large marshmallows)
  • ¾ cup Pascha Salted Caramel Chips
  • 2 heaping cups vegan butter popcorn
  • ¼ tsp salt

Instructions:

  1. In a pot over medium heat, whisk together the coconut cream, oat milk, and maple syrup. Add in 2 cups of popcorn and salt. Bring to a boil and simmer for 5 minutes.
  2. Strain out the popcorn and add to a blender with the remaining two cups of popcorn and the xanthan gum. Blend well and sieve out the popcorn bits.
  3. Pour into a Ninja Creami container and freeze standing up straight. (If you don’t have a Ninja Creami, freeze in ice cube trays. Freeze overnight for best results.)
  4. For the marshmallow layer, melt 1 tbsp coconut oil in a pot over medium heat. Add in the marshmallows and melt together. For easier melting, if using large marshmallows, cut them into smaller pieces.
  5. Once the mixture is melted, stir in Pascha Salted Caramel Chips until melted.
  6. Stir in the popcorn until completely coated and spread in a single layer on a parchment lined baking sheet.
  7. Bake in a preheated oven at 225°F for 6-8 minutes, keeping an eye that it doesn’t burn. Let cool and break into pieces. Reserve extra popcorn for garnish when serving.
  8. To assemble, melt ¼ cup of Pascha Salted Caramel Chips in a double boiler and set aside.
  9. Let the ice cream sit on the counter for 10-15 minutes and then blend using the Ninja Creami with a respin if needed. If frozen in ice cube trays, use a blender. If the ice cream is too thick, add a splash of dairy free milk.
  10. In a container, layer ice cream, a drizzle of melted caramel chips, and popcorn. Repeat until finished.
  11. Garnish with extra popcorn layer to serve. Serve immediately or, if needed place back in the freezer to firm up again.
